A Healthy Carrot Cake.
Tuesday, February 22, 2011 at 03:04PM I made carrot cake this weekend! I tweaked my mother´s delicious recipe to make it a bit more healthy and it turned out really good so I thought I´d share it here.
Here´s how to do it:
Blend 4 egg yolks with 100 grams sucanat, 2 tablespoons neutral oil and 2 tablespoons apple juice. In a separate bowl mix 110 grams ground nuts (I used hazelnuts) with 110 grams whole wheat flour, 1 teaspoon baking powder, 1 teaspoon cinnamon, 1/2 teaspoon ground ginger and a pinch of salt. Add the flour to the egg mixture and beat until just incorporated. Add 300 grams finely grated carrots. Beat 4 egg whites until stiff and incorporate. Bake for 40 to 50 minutes at 175 degrees C.
This cake is only barely sweet, so if you don´t like that, add more sugar or maybe some raisins. Also, you could make a frosting which I usually don´t do because I´m lazy. Anyway I thought it was pretty much perfect, really moist and yummy. I hope you like it, too!
